Cinnamon is one of the most fascinating and popular spices around. The article "18 Facts About Cinnamon" includes this interesting bit of info :

"There was an ancient belief in something called the Cinnamon Bird that supposedly lived in Arabia and used cinnamon to build its nests. Herodotus wrote that these birds flew to an unknown land to collect the cinnamon and took it back with them to Arabia. Most people don't know cinnamon is good for diabetics. They should use 1/2 to 2 teaspoons a day to replace sugar.

When cooking at home, there are typically certain types of spices and seasonings that my husband and I use for most of our dishes. Of course, salt, pepper, and garlic are a given for many dishes containing meats. However, we also like using paprika, oregano, and bay leaves for some of the German and Latin dishes we prepare. Our favorite two seasonings are Sazon by Goya (they come in small orange envelopes and just make food taste so much better) and Adobo by Goya. Goya is a Latin food brand and has a number of great add-ins that helps bring out the rich, flavorful side of food. These are some of the spices and seasonings that we always have on hand and cannot cook without.

Salt is number one - it was a currency after all :) Invaluable in making all foods taste great, by bringing out the inherent flavors of what it is used with. Potatoes have added character, tomatoes melt in your mouth with zing!

Pepper - ground peppercorns of all descriptions add a tasty bite to the food. An earthy richness than comes from no other spice. It makes plain cottage cheese taste bright and makes a salad interesting.

Curry - Earthy richness, spicy flavors, a delightful aroma, a heat all through your body, its the spice of summer and the warmth of winter. It adds a bite to a plain meal, it adds character to a variety of foods and so easy to use. Noodles and spice, its all you need. Don't confuse curry with chili :)

Vanilla - an expensive spice in the true form, and one of the essential dessert spices. To highlight sweetness its perfect, to make something creamy and delicious its without par. My vanilla jar is sticky and I love it!

Chili - yes it has a flavor all its own. It makes any dish have a double meaning !!! You first taste the dish, the ingredients used, the method...then you taste the spice! wow. Your taste buds crave more attention :) It makes eating an experience and lightens your mood. The heat is relaxing, the zing is intriguing, its addictive.

These are my choices :)

I generally agree with @kty2777 though i think chili deserves a spot just above vanilla, because it imo has more potencial. I very much enjoy the taste, not only in warm dishes but also in icecream and chocolate.

Several of my favorite spices:

Salt, without salt, we’ll have bland and sometimes inedible food. Some people argue that you can substitute with soy sauce, but soy sauce becomes salty because of salt, so the principle remains. A lot of bland or inedible food can be improved by adding some salt in it. That is why there are so many people eat salty food, because their food is actually not good and need improvement.

Chili, at least for me and a lot of people in our area. I’m addicted to chili. I eat almost everything save for dessert with chili. Chili, literally and figuratively, spice up your food.
Chili sauce makes almost all food edible. In here, we just fry something up, serve it with rice and eat it with chili sauce. My brother in law can polish anything on his plate if he has enough chili sauce. Chili burns your tongue and distracts you from the taste of the food.

White or Black Pepper. Although it is not important as salt, they give heat and flavor to the dish, sometimes intensely so. Black pepper sauce is one of the most popular sauce here. You can cook beef, chicken, crabs, shrimps, anything you can think of with the black pepper sauce.

Garlic. If you want to reduce salt, garlic is the way to go. Some people don’t like the smell, but you can greatly reduce the smells by frying it to dry.

Want to try cooking just with these seasonings? Blend all the ingredients listed here in olive oil, add some vinegar or lemon juice, use it to marinate your meat, and grill it.

For Indian food, the seasoning that is most versatile and widely used is garam masala, a mixture of spices that is grind together. I've eaten garam masala candies, candies that were spiced with garam masala, and it tasted quite good.

I think garlic makes almost everything taste better! At the Gilroy Garlic Festival in Gilroy, California I even tried garlic ice cream. You know what? It was pretty good!

I do not cook with salt or plain pepper. The spices I use differ from dish to dish.

Hamburgers- garlic, cayenne, basil, chili powder, paprika

Spaghetti- garlic, cumin, basil, oregano,

Gumbo- zatarains, garlic, bayleaf, file

Sweet potatos- ginger, clove, pumpkin pie spice, cinneman, little sugar.

I use spices differently each time. It depends on the mood I am looking for. These are just some of my basics and even they change from time to time.

I cannot live without spice.

My top used two are likely salt and pepper of course. I add salt to nearly everything.. even fruit.

Garlic is another I couldn't live without.. fresh garlic, garlic salt, garlic powder, you name it I use it. It's actually my favorite smell.

Onion powder, summer savory, chili powder, bay leaf, cinnamon and sugar are a few more regular used ones.

My spice rack is literally 6 foot by 4 feet though and so packed some spices are stacked. My husband is a chef.. we not only grow our own but we import spices often.

The right quantity and combination of salt, sugar, sour (vinegar, tamarind paste or anything that adds sourness to food) and pepper (or chillies). They are just indispensable.

Every other spice is just optional.

I think salt and pepper are at the top of my list as well. I don't use them as much as I should when cooking I think because I grew up with a diabetic and nothing was made with salt. However, after watching lots and lots of food tv and cooking shows, they are two spices that are put in practically everything. As I understand, their job, especially salt, is to bring out the natural flavor of food. I try to incorporate them both a bit more in my own cooking.
