Christmas Eve dinner can be a very upscale event, perhaps you are inviting the entire family, or maybe it will just be a quiet evening for your family.
I guess it depends on which route you are going. For a nice big dinner, you can make a ham or turkey dinner with all the important sides like potatoes, salad, vegetables and rolls.
I personally enjoy making a nice homemade chili. I grew up having chili every Christmas Eve, so for me, it doesn't matter if it is a large or small event, chili with fresh bread and butter and oyster crackers seem to rule the menu.
I would just focus more on making a nice meal and less on what you are actually cooking. Thought, planning and cooking from your heart are usually appreciated.
