Besides chili:
Various dips in slow cookers: queso, artichoke/spinach
Someone *always* brings spinach dip in a bread bowl.
Veggies and ranch dip
Fruit and caramel dip
Wings: Buffalo, Parmesan, teriyaki
Various munchies: chips, nachos, crackers
Cheese logs
This is the casual, rowdy party. I've also been invited to a very upscale party where the combined money involved probably could have bought at least one of the teams, or the stadium. At this party, the menu was:
Porterhouse steaks
Various seafood: shrimp, lobster, crab, with butter for dipping
Crab cakes and dip
Architectural veggie hors d'œuvres
A couple of kinds of fondue
Caviar for the roughly 60 people there--I think it was whitefish, not sturgeon
A pesto bombe (like a cheese log filled with pesto)
A bunch of desserts: chocolate lava cakes; liquor-swirl cheesecakes; "death by chocolate"; a cook was busy making ice cream all night. Not serving it; running a bunch of ice cream makers!
Just about anything you can imagine to drink. It was all ready over the top.
So there are two extremes. Really the first isn't the low end--generic potato chips and pop would be.
This year friends of mine who run a Cajun restaurant in Indy are having a buffet. He's from New Orleans; she's from Indy. It's going to be a blast; it's again a fundraiser for charity and will have the seafood they fly in from his home in New Orleans, as well as her Midwestern dishes. It promises to be a lot of fun with room for fans on both sides!

with some celery and carrot sticks, and ranch and blue cheese dip
Most everything else is optional.
I like to make a sub/hoagie and cut it up into small fist sized portions
that's fairly cheap for feeding large numbers, and if you stuff a lot of meat, people will love it
Sausage is great, kielbasa, italian, whatever, cut it up or serve it on a bun.
