Although Nioxin works great with my hair, still I am interested to know which natural herbs or tonics can add more shine and bounce to my hair?

I personally love Rusk Sea Kelp Serum. It is about $10 a bottle and you do not need much at all. You can apply it to wet or dry hair and it makes your hair super soft, shiny and it your hair smells great. If you ever straighten your hair, Rusk Sea Kelp is a must have for afterwords for that polished healthy finish. You can find sea kelp at salons, Amazon and even on Ebay.
I am not certain about adding olive oil to your Nioxin. I would be afraid to add anything to a product. Nioxin is made with super healthy ingredients and I would not really experiment with adding anything to the formulas. However you could use Nioxin and then use Rusk or any serum for the polished finish.
