The food most commonly found in New Mexico is mainly of Mexican origin. Popular dishes in Albuquerque are popular throughout the state too. The state is well known for its popular and hot chiles and all possible variations of enchiladas, tamales, burritos, the typical posole, mole, carnitas and many other tasty dishes. Some people may be confused by the use of the word Chile which has one meaning when describing the so called Chile sauce and a totally different one when describing the fruit, the chile. Indeed, chiles are used to prepare the salsa if the cook wants to make it really spicy.
