What is your favorite way to prepare broccoli?
I'd like to get back to eating more green vegetables so I would like some new ways to serve them. What's your favorite?

I have 2 favorite ways of preparing broccoli, both of which leave it tender and not over-cooked. To me, mushy or soft broccoli is unappealing.
The first way I learned from a restaurant owner in Portland, Oregon, and it's called 'blanching'. Take a large saucepan, add about one inch of water and bring it to a rollicking boil. Add your broccoli flowerettes and cover. Cook for 2 to 3 minutes.
A variation is to use a steaming basket in the pot of boiling water. Cook until a fork stuck into a stalk will go all the way in, but cook no longer than that.

Hi Groy, thanks for answering. I steamed some tonight and added it into a casseroole similar to a green bean casserole. It was pretty good.
If you have casserole suggestions I would be interested in those too
