I can't answer whether most people are eating more pork than 10 years ago but I certainly am. I currently live in the Philippines and am able to buy pork fresh at the markets for my meals. We use ground pork in place of ground beef in many recipes since beef is not as easy to get and is much more expensive. We eat Ground Pork and Cabbage a lot, have pork in our Lumpia and eat Pork Sinigang but probably our family favorites are Pork Menudo and Pork Adobo
Pork Adobo is a popular Filipino dish enjoyed by many Americans in the US also. Mahalo has a page for How to Make Chicken Adobo. The recipe on this page works very well for making pork adobo also.

Among favorites, my kids love pork tocino which is a cured pork made from pork loin. The Market manila blog offers info on how to make your own. Also since we cannot get the standard American style breakfast sausage we have learned to make our own from ground pork.
