This is my Favorite Bacon Recipes.....

1) Grilled Bacon, Tomato, and Cheese Sandwiches.

Great grilled cheese sandwiches with bacon, tomatoes, and sliced Swiss cheese.

Ingredients:
* 8 slices bacon, cut in half
* 8 slices bread, toasted
* 1/4 cup butter, softened
* 1 1/2 teaspoons dry mustard
* 1 1/2 teaspoons Worcestershire sauce
* dash of cayenne pepper
* l/2 pound sliced Swiss cheese
* 8 fresh tomato slices, about 1/2 -inch thick

Preparation:
Partially cook bacon; drain. Blend together butter or margarine, mustard, Worcestershire sauce, and cayenne pepper. Spread on one side of toasted bread. Cover with cheese, then add tomato slices and bacon strips. Broil about 3 inches from the heat until cheese is melted, tomato is tender and bacon is crispy. Serves 4.

2) Bacon Puffs...

Bacon puffs are made with bread and bacon and cheese,
Cook Time: 20 minutes
Total Time: 20 minutes

Ingredients:
* 12 slices Bacon, about 8 ounces
* 8 slices thin-sliced bread
* 2 cups shredded Cheddar cheese

Preparation:
Cut crusts from bread then cut each slice in half. For each puff, place 2 bread halves, end to end, on a strip of bacon. Sprinkle with 3 tablespoons shredded cheese. Roll up and fasten with picks. Stand rolls on edge on a rack in a shallow baking pan. Bake at 400° 20 minutes, or until lightly browned. Serve hot.
Makes 12 appetizer puffs.

3) Bacon Stuffed Mushrooms....

Cook Time: 25 minutes
Total Time: 25 minutes
Ingredients:
* 1 pound medium fresh mushrooms
* 4 Bacon slices diced
* 1/2 cup minced onion, or use part green onion
* 2 tablespoons Minced fresh green pepper
* 1 teaspoon Salt
* 1/8 teaspoon Pepper
* 3 ounces Cream cheese, room temperature
* 1/2 cup fine dry bread crumbs, plain
* 1/4 cup Hot water

Preparation:
Clean mushrooms, remove and chop stems; set aside.

Fry bacon in a heavy skillet. Remove with a slotted spoon and set on paper towels to drain. In bacon drippings, saute onion, green pepper, and chopped mushroom stems until tender; drain. Add salt and pepper.

Soften cream cheese; blend in cooked bacon and vegetables. Press mixture firmly into mushroom caps, mounding a bit. Place bread crumbs in a small bowl. Turn filled mushroom caps upside down and press gently in the bread crumbs to coat tops. Place in a 9 x 13 x 2-inch baking dish. Add hot water to pan and bake, uncovered, 20 to 25 minutes at 325 degrees.
Makes about 2 1/2 dozen stuffed mushrooms.

4) Bacon-Wrapped Scallops.......

A delicious appetizer.

Ingredients:
* 24 large sea scallops (about 2 lbs.)
* 12 slices partially cooked bacon
* Seasoned pepper

Preparation:
Cook bacon gently until partially cooked but not crisp and still very flexible. Rinse scallops with running cold water, pat dry with paper towels. Cut each bacon slice crosswise in half; wrap each half around a scallop, securing with a toothpick. Sprinkle scallops lightly with seasoned pepper. Preheat broiler. Place scallops on rack in broiling pan. Broil 4 to 5 inches from heat for 8 to 10 minutes, or until scallops turn opaque throughout, using tongs to turn scallops frequently so bacon will brown evenly on all sides.

5) Bean and Bacon Pizza.....

Ingredients:
* refrigerated or homemade pizza dough, for 12" pizza
* 1 can (16 oz) chili beans, mild or hot
* 5 slices bacon, cooked & crumbled
* 1 small onion, sliced in rings
* 2 cups Mexican-style cheese blend, shredded

Preparation:
Place oven rack in lowest position; preheat oven to 425°. Grease a 12-inch pizza pan or 9x13-inch baking pan. Press pizza dough into greased pan. Bake for 5 minutes, or until crust just begins to brown. In a bowl combine beans (undrained) onion slices and bacon. Spread bean mixture over the pizza crust. Sprinkle cheese evenly over the bean mixture. Bake for 8 to 12 minutes, or until cheese is melted and bubbly.
Serves 6.

I love bacon cheeseburgers! I like naturally smoked, very well done, crispy, streaky bacon from pork belly, fried in its own grease. However, bacon is bacon to me. And I eat whatever kind of bacon that is fried very crispy. I love bacon. I usually buy them in bulk when they're on sale in supermarkets or warehouse clubs. I try to find the naturally smoked ones. I'm concerned about the use of sodium nitrite. But again, I'd eat any crispy bacon offered to me. I can eat it every day. I know it's not supposed to be healthy, but I used to go for weeks relying on bacon as the main source of protein and fat in my diet. I would fry I can't remember how many pounds of bacon once a week, store it in the fridge, and heat them in the microwave almost every day to eat. I don't remember ever getting sick of bacon. The only weird thing is that I don't like to eat them when they're not a little bit overcooked.

This is not an excellent picture, but I like bacon fried like this, but before any charring occurs. I know that burning meat produces harmful amines, so I just fry my bacon on its own grease on very low heat for a long time. This is the best way to avoid charring.
