What is your favorite horror and/or fantasy book or author?
I'm looking into reading the best of the two genres. I'm a fan of Anne Rice, Charlaine Harris, Stephen King, Robert Jordan, and Terry Brooks...as well as others.

Well, you can't beat the King - Steve King is my hero. I've never seen another modern author pen so many books (aside from maybe Dean Koontz, whos also outstanding) that are simply riveting reads.
I just read "Under The Dome" by Steve King and was blown away. It's his most reent book, (and also weighs about 5 pounds and took me three months to read) but man, I couldn't wait to make time to read it. You can find it at Barnes abnd Noble pretty easily under new releases.
Also, try Robert McCammon's "Swan Song" - it's sort of a short lead up to nuclear holocost, and then following the intertwined stories of both the forces of good and evil after it's all over and the rebuliding of society is occurring. It's not a post-apocolyptic book per se - it's really more of a fantasy/horror book with all of the things that happen to the characters and the things they go through together. It's so well written, you get invested in the lives of these folks. The first time I read it, I cried when I finished it and remains one of my favorite books to this day.
As far as fantasy goes, you just can't beat Margaret Weiss and Tracy Hickman's epic Dragonlance series. Start with Dragons of Autumn Twilight, then Dragons of Winter Moon and finally Dragons of Srping Dawning. By the time you finish those three, you'll be hooked and will enjoy the other (seemingly hundreds) of other books and stories from the Dragonlance World.
