For Thanksgiving a pumpkin roll! It's the best of both worlds, pumpkin cake with yummy cream cheese filling. It was a recipe that I found in my grandmother's old recipe book, but I am the one who makes it.

For Christmas it's Italian Cream Cake, it is a very old family recipe. My grandmother makes it every Christmas except for the year she had a heart attack. Then my aunt made it.

While not a total "Christmasy" dessert in the red, white and green theme, the kids request my Reese's Peanut Butter Cup Cheesecake with an Oreo Cookie Crust every year. If you like chocolate, peanut butter and Oreo cookies, this is the one for you! I've been making this cheesecake for um, hmmm, too many years, and if I told you, then you'd know how old I am :-)-->

I would have to say cheesecake if not that I sometimes make jello cupcakes( just the recipe for jello except molded in a cupcake pan) cheesecake recipe can be found on google search

Extra Fluffy Thick pancakes

My own recipe and you have to make sure the mix is a little thick even for pancake mix but we'll get to that. Have just perfected this recipe over the last few months so please please can you call them 'Kty pancakes' hehehehe

1 1/2 cups self raising flour
1/2 teaspoon baking powder
1 tablespoon white sugar
( mix these together well in a large bowl )

1 beaten egg
25 grams melted butter
1/2 cup milk
( mix these together in a small bowl )

Have 1 cup of very cold lemon soda on the bench - the amount you use does depend on how fluffy and thick you want your pancakes

Mix little bowl of wet ingredients to big bowl of dry ingredients - it will not mix completely. Around the edge of the big bowl pour in the soda and mix GENTLY until the mix is like thick wet goop! Don't stir too much! You might use all or some of the soda its OK it varies!

Now when you cook the pancakes make sure you pour in enough to make them thick - they will cook very well but seem big and puffy

Once cooked I love pouring custard and stewed fruit on them, or eating with bacon and fried tomatoes - they are VERY fluffy!

Simple but sooo yummy!

This is my family's favorite holiday dessert, although it's not my own recipe, I got it from a friend and I'm sure she wouldn't mind if I shared it. I don't know the name of the recipe, we call it "that purple fruit salad."

8 oz container whipped topping (thawed)
8 oz cream cheese (room temp)
1 can sweet pitted cherries
1 can crushed pineapple
1 cup grapes
2 c (or more!) mini-marshmallows.

First, you need to blend the whipped topping and cream cheese together. This is easiest if you mix a small amount of each together until it's fairly smooth, and gradually add more till it's all combined. I use a food processor for this step, which makes it really easy, but a few lumps won't hurt anything if you mix it by hand.

Drain the juice off of the cherries and mix 1/4 cup of the juice in the topping/cream cheese mixture. Dump in the drained cherries, the whole can of crushed pineapple, the grapes and the marshmallows. Fold everything together gently, and keep refrigerated until it's serving time.

This fruit salad turns a pretty lavendar color, which makes it especially appropriate for a spring or Easter celebration. You could also add nuts, coconut flakes, or whatever else your family likes to the salad.

The extra cherry juice is yours to do whatever you want with. Here, the grandkids usually drink it!

BLueberry cheese cake Ma'am... make it homemade with pure white cheese in it instead of putting icing..

it tastes so good I barely even remember my name for a sec. LOL

Alternative would be Oreo cheesecake

My favorite holiday dessert recipe is "Mango Float". This is very easy to make and it tastes good. I have been making this since our first Christmas together with my husband and that was 12 years ago. He loves mangoes and now my children loves it too! They are very excited during the holidays to eat this dessert.

These are the ingredients:
Ripe yellow mangoes sliced thinly
Graham crackers
All purpose cream
I can condensed milk

How to make:
1. Mix the condensed milk and all purpose cream
2. Place a thin layer on a pyrex or any rectangular glass container
3. On top of the cream place the thinly-sliced mangoes
4. Then place the graham crackers neatly on top of the mangoes
5. Then put the cream again on top of the crackers.
6. Followed by mangoes
7.Do this until you finish it off at the top with mangoes.
8. Put the glass container in the freezer.
You can serve it after an hour or two when it is a little bit frozen. It tastes really good. My daughters can attest to that.
