Make it special by:
--Using a "different" meat--grass-fed--beef? Buffalo? Venison? Chicken?
--Use a bit of chocolate and a bit of cinnamon or curry in the spicing--just the barest whisper, like 1/8 teaspoon for a very large pot--adds a depth of flavor and some mystery, but the main flavor is still chili
--Make it interesting with lots of different kinds of beans--by 15-Bean Soup and don't use the spice packet, or go to a natural food store and go nuts in the bulk section
--Use a mix of tomato sauce, crushed tomatoes and diced tomatoes
--Simmer it forever; make it at least 24 hours ahead
--Give your guests all kinds of toppings: sour cream; several kinds of shredded cheese (sharp cheddar, colby, jack, pepperjack, Mexican blend, Asadero, queso blanco); raw onions; chopped scallions; corn; salsas/picos; various hot sauces; corn chips; pasta; and let them build their bowl the way they like it.

I don't know if you've had this dip before--you find it in the produce section--but it is very good.

7 cups Crispix®
1 cup mixed nuts
1 cup pretzels
3 tablespoons margarine or butter, melted
1/4 teaspoon garlic salt
1/4 teaspoon onion salt
2 teaspoons lemon juice
4 teaspoons Worcestershire sauce
1. Combine KELLOGG'S CRISPIX cereal, nuts and pretzels in 13 x 9 x 2-inch baking pan. Set aside.
2. Stir together remaining ingredients. Pour over cereal mixture. Stir until evenly coated.
3. Bake at 250°F for 45 minutes, stirring every 15 minutes. Spread on paper towels to cool. Store in airtight container.

1 package of frozen chopped spinach (thawed and squeezed dry)
15 oz can or jar of artichoke hearts, bottoms or pieces, drained and coarsely chopped (make sure you get the ones that are in water, not marinated)
8 oz of mayo
2 cloves of fresh garlic finely minced or 1 tsp minced garlic
12 oz tub shredded Parmesan cheese
1 can diced green chiles
Salt & pepper to taste
Mix all the ingredients together and bake uncovered for 20 minutes at 350 degrees. Serve with blue corn tortilla chips and a side of sour cream.
