M$2 cups whole wheat flour
1/4 cup plus 2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup plus 2 tablespoons unsweetened apple juice
2 egg whites, lightly beaten
1 cup finely chopped apple (about 1 medium)
1/3 cup coarsely chopped fresh cranberries (or frozen)
Optional: sprinkle chopped walnuts on top before baking
1. Combine flour, sugar, baking powder, baking soda, cinnamon in large bowl. Stir to mix well. Add apple juice, egg whites, and chopped apples and stir just until dry igredients are moistened. Fold in cranberries.
2. Coat loaf pan (or muffin pan) with cooking spray. Bake 350 degrees. Loaf pan will take approx. 25-30 minutes - muffins will take approx 16 minutes. Insert wooden toothpick in center - it's done when toothpick comes out clean (free of batter).
