I only use the red stuff, pouring anything green except pesto over anything I eat just scares me.
I also can't believe that for all the years I lived in Louisiana, I never went to Avery Island to take a tour of the plant. They have huge music and food festivals, and even offer printable Tabasco sauce coupons from their official site! (Must remember that for next time!)

M$My husband is also a hot sauce fanatic. He will put hot sauce on everything and anything including scrambled eggs. (Note to self, maybe I cook to bland!) But in all seriousness, I do cook pretty good, my husband just enjoys the hot spiciness of hot sauce. I typically buy Tabasco Sauce, although I have tried a few other brands. It seems like the the favorite in this house remains the Tabasco Sauce. I do use it in cooking, a dash here and a dash there. I will read your post again to see if anyone shares a homemade recipe! My husband would truly love it, I am sure!

M$I've never tried making my own hot sauce, but I have tinkered with chopping up hot peppers into a very fine relish. A very little of this goes a long way. I once licked the inside of a old habanero pepper and I had to hold my mouth under a facet of water for over 30 minutes.

M$My favorite home-made hot sauce is an abomination I make out of pickled jalapenos, raw onions, fresh garlic and lime juice. It makes people cry, but they can't stop eating it.
