Windows would definitely have to be twhirl. It's free, lightweight, runs on Adobe Air, connects to Twitter as well as friendfeed, laconi.ca, etc., allows you to search through tweets, and includes built-in image/link posting using TwitPic/snurl/twurl/etc. I've been using it for about 4 or 5 months now and have really been enjoying it.
For the iPhone, the best client I had used was Twitterific. The reason I liked it so much was that it was simple - it didn't involve a lot of clutter no matter how many people you're following, it had simple text entry boxes, and still included picture posting and things like that.
I use twitter the most from my Nokia N95 now, which I use Fring for. Fring is available for any Symbian S60 mobile device (among other operating systems) and was meant to be an instant messenger but in their past few releases they've integrated Twitter, Facebook, Gmail and some more. So in addition to being able to tie in your MSN, ICQ, whatever IM account - you also get Twitter/Facebook/etc. updates in the form of an IM window within Fring. The only downside I've found to date is that you can't actually follow links by clicking on them - it does not hyperlink urls.

M$My favourite would be the TwitterFox extension for firefox. Its easy, has all the tabs (recent, replies, messages) and sits as a small tiny icon in the firefox status bar. It also displays the number of new messages in the status bar.

M$A nice piece of software for browsing multiple twitter streams. Great if you like to watch multiple search results at the same time, while keeping an eye on your own stream, @replies and direct messages. Plus nice and easy to use interface.
And for your iPhone - tweetie, ($3 USD) has loads of useful features. Allows you to do practically anything you could with a desktop client - search, follow, unfollow, trends etc. Plus you can search for nearby tweeters using gps. Definitely worth the money.
