What is your best casserole recipe?
I need some new casserole recipes. Casseroles are easy to make and usually taste great even the next day. What is your best casserole recipe?

My very best and favorite casserole recipe is Broccoli Casserole. This can be made with just broccoli as a side dish or you can add chicken to make it a complete meal.
Ingredients:
1 large head of broccoli
1 can of Cream of Mushroom soup
½ cup Mayonnaise
1 egg
¾ cup shredded cheddar cheese
¾ cup shredded or cubed Velveeta cheese
1 medium sized onion
1 tsp. Salt
½ tsp. Black pepper
1-2 cups Bread crumbs, crushed crackers or crushed pita chips
1-2 Tbls. butter
Cut broccoli into medium sized pieces and cook on stove-top until just barely soft. While broccoli is cooking, whisk egg, soup, mayo and salt and pepper together. Chop onion and add to mixture. Add cheese and then drained and cooked broccoli. Top with bread, or crackers and dot with butter.
Bake at 350 degrees about 1 hour, until casserole is bubbly.
Option: Add cut up, cooked chicken.
