Hello mmng23,
My favorite breakfast bar recipe is the one listed below got from Nigella Lawson’s website http://www.nigella.com/recipes/view/breakfast-bars-55. The preparation time for this is quite low however baking them takes nearly an hour. What I like about this recipe is that it is simple, requires few ingredients and contains peanuts which I love. Also Nigella’s website has a link to equivalents and conversions listed at the bottom of each recipe and these are very helpful.
If you want a healthier breakfast bar then check this link which has recipe for http://vegetarian.about.com/od/breakfastrecipe1/r/energybars.htm a whole wheat one. If you want a recipes for high protein breakfast bars then check this link which has many http://recipes.sparkpeople.com/great-recipes.asp?food=homemade+protein+bars
Another good recipe for a high protein breakfast bar is here http://dairyfreecooking.about.com/od/breadsbakery/r/proteinbar.htm and it features soy powder. I would suggest that you try this recipe out if you need your breakfast bar to be a good source of protein. Also this recipe has been reviewed and people have found it to be very tasty.

2.Warm the condensed milk in a large pan.
3.Meanwhile, mix together all the other ingredients and then add the warmed condensed milk, using a rubber or wooden spatula to fold and distribute.
4.Spread the mixture into the tin and press down with the spatula or, better still, your hands (wearing disposable vinyl gloves to stop you sticking), to even the surface.
5.Bake for 1 hour, then remove from the oven and, after about 15 minutes, cut into four across, and four down to make 16 chunky bars. Let cool completely.
