Yeast is an ingredient that is used for baking breads and pizza dough as well as cinnamon rolls. It makes bread rise magically-- or so it seems. Actually, you’ll be surprised to know that all that magic is due to the fact that yeast are unicellular fungi that feed on the sugars found in flour. They scarf down all the sugar they can get their little fungihands on and then start to release carbon dioxide (gas!), which in turn causes the bread to rise. When preparing the dough, you must let it sit at room temperature, usually until it has doubled in size. This down time is really just time for the yeast to munch away and then slowly release their gasses to make the dough double its size. Not to worry! The fungi can’t take the extreme heat of the oven, and they die once they’ve made the bread rise.
