Washing your hands keeps germs from infecting you in a two part method.
When you inevitably get these microscopic germs on your hands, they can spread to inside your body where they can do harm through eating or touching your face.

When you wash your hands, the soap from the water dislodges any dirt or germs that may stuck on your hands.
The hot water helps remove the dirt and kills the germs through temperature, making your hands safe to eat with.
