What is the last thing you made with your own hand?

I cook everyday. Last Friday, I made an egg less banana bread for the potluck at the work place. It got a lot of complements. I made Sambar , a south Indian soup, yesterday. Today, morning I made some flat breads.
Usually weekday mornings I make eggs for my daughter. Sometimes I make milk smoothies for a change. Apple pancakes from scratch is also appreciated by my family.

I made Steak Fried Rice with leftorver steak and white rice last night for dinner.

Heat olive oil in a large frying pan until hot. Add the rice to the pan, it should sizzle and begin to fry immediately. After a few minutes of stirring the rice in the hot oil, I scrape all the rice to the sides and allow the center of the pan to get hot. I crack three eggs in the center of the pan and scramble them quickly, mixing them into the rice as they begin to get done. Then I add the cubed leftover steak (we had top sirloin), frozen peas and white corn. When the frozen vegetable get warm I add chopped green onions or scallions, and other leftover cooked vegetables (last night is was broccolli). When everything is nice and hot I season with soy sauce until it reaches the right color and flavor. Serve it up hot! It is a quick and easy one-pan meal.

Oh, and if you didn't guess, the night before I made top sirloin, rice and broccolli for dinner with my own hands. :~)

It's not the season, but I've been craving pumpkin. Pumpkin is a good source of fiber and protein so here's what I "hand created" to satisfy my pumpkin passion:

GOLDEN PUMPKIN WAFFLES

Recipe from "Secrets of Fat-Free Cooking" by Sandra Woodruff, RD

1 cup whole wheat flour
1 cup cornmeal (or brown rice flour)
2 Tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
2 1/2 teaspoons pumpkin pie spice
4 egg whites
1/2 cup mashed cooked or canned pumpkin
1 cup skim milk

1. Coat a waffle iron with nonstick cooking spray, and preheat according to manufacturer's directions.
2. Combine whole wheat flour, cornmeal or brown rice flour, sugar, baking powder, baking soda, and pumpkin pie spice in a large bowl, and stir to mix well. Set aside.
3. Place the egg whites in the bowl of an electric mixer, and beat on high until soft peaks form. Set aside.
4. Add the pumpkin and milk to the flour mixture, and stir to mix well. Gently fold in the egg whites.
5. Spoon 1 1/4 cups of batter (or the amount stated by the manufacturer) onto the prepared waffle iron. Bake for 6 to 8 minutes, or until the iron has stopped steaming and the waffle is crisp and brown,

Comment: Delicious with maple or berry syrup OR fresh whipped cream sprinkled with nutmeg!

I just made a batch of lemon pepper hummus in the food processor. Started out with organic dried chickpeas, so I had to cook them ahead of time. I made extra and prepared a sweet potato and chickpea curry for dinner that day.

I didn't have tahini in the house for the hummus, so I replaced it with cashew butter.

I most recently made a peanut butter and jelly sandwich.

The recipe was:
two slices of Pumpernickle bread
some freshly ground no salt pure Peanut Butter from Rouses
some strawberry jam from Egypt (which showed up at a local discount store for some reason).

I accompanied the sandwich with some NOLA Hoptitoulas beer (an IPA)

I made some ragù this weekend. Cost me a bit of my thumb while I was chopping the onion, but it turned out great!

- 1 pound of ground beef
- 1 onion
- 1 carrot
- 1 bell pepper (I wasn't able to find one stalk of celery to make a proper ragù)
- A few fresh basil leaves
- A can of diced tomatoes
- A small can of tomato sauce

Simmered for about three hours, came out delicious! Used on top of some whole wheat penne pasta - che gustoso! ;)
