Spanish Rice is usually colored with tomato sauce, pimiento, and achiote oil. It is not usually very spicy. Dirty Rice was popularized in Louisiana during the Cajun cooking craze. It is "dirtied" by Cajun spices such as cayenne pepper, black pepper, oregano, and cumin and by bits of spicy sausage. It is usually VERY spicy.
