What is the difference between saturated and unsaturated fats?

Fats consist of a wide group of compounds that are generally soluble in organic solvents and largely insoluble in water. Although the words "oils", "fats", and "lipids" are all used to refer to fats, "oils" is usually used to refer to fats that are liquids at normal room temperature, while "fats" is usually used to refer to fats that are solids at normal room temperature. "Lipids" is used to refer to both liquid and solid fats, along with other related substances.

Saturated fats are found in animal products and processed foods, such as meats, dairy products, chips, and pastries. The chemical structure of a saturated fat is fully saturated with hydrogen atoms, and does not contain double bonds between carbon atoms. Saturated fats are not heart healthy, since they are most known for raising your LDL cholesterol (“bad” cholesterol).

Unsaturated fats, on the other hand, are found foods such as nuts, avocados, and olives. They are liquid at room temperature and differ from saturated fats in that their chemical structure contains double bonds. Additionally, studies have shown that unsaturated fats are also heart-healthy fats - they have the ability to lower LDL cholesterol and raise HDL cholesterol ("good" cholesterol).

Before discussing the difference between saturated fats and unsaturated fats, you must bear in mind that both of them are considered fatty acids, which is connected with alcohol glycerol.

Let us now take a look at the significant differences between the two. As far as saturated fats is concerned, this fatty acids does not have carbon-carbon double bonds and are in fact saturated with hydrogen. In the case of unsaturated fats, this type of fatty acids is said to have double bonds ranging from one to four in the middle of adjoining carbon atoms. Furthermore, an unsaturated fat contains one or more unsaturated fatty acid, unlike saturated fat which has no unsaturated fatty acid.

Due to the double bond on unsaturated fat mentioned above, this has led to what is termed as "kinks in the hydrocarbon backbone the fat will not pack into a regular structure and thus remain fluid at low temperatures. A saturated fat though will pack well and be a solid a low temperatures."
