What is the difference between evaporated and condensed milk?
Does condensed milk contain more sugar than evaporated milk? What are the milk fat levels of both types of processed milk?

These are the main differences between condensed milk and evapourated milk.
Condensed milk has far more sugar in it than evapourated milk has, it has been sweetened by adding a lot of added sugar to it and while it can be great in recipes like Banoffee Pie and Fudge, it could not be considered a particularly healthy form of milk.
Evapourated milk has had part of the water content removed by evapouration, so the result is a more concentrated, thicker form of milk than in its natural state, but with no added sweetness.
So in effect, condensed milk is evapourated milk, but with added sugar, a rather scary amount at aprox 40 to 45%!
Evapourated milk contains around 7.9% milk fat and condensed milk very slightly higher at around 85%.
