What is the difference between English Walnuts and Black Walnuts?

Do they taste different? Is it important to use what the recipe calls for?

Black Walnuts are from a different species of tree than English (also called Persian or Common) Walnuts.

They are both from the same family; but, Juglans nigra is from the central USA and Juglans regia was originally from Central Asia.

English walnuts (regia) are the ones that are commercially grown for nuts worldwide. Black Walnuts are mostly harvested from wild trees, although they are grown for wood in Europe now.

It is important to use what the recipe calls for. Although the taste is fairly similar the Black Walnut has a much stronger flavor, as well as being somewhat different.

--"Black walnuts have a strong, rich, smoky flavor with a hint of wine. Use them any recipe that call for nuts, but unless you’re featuring the black walnut's flavor, use it sparingly, or it will overpower everything else. I often combine one part black walnuts with three parts commercial (English) walnuts."---

The Carlyle Brewing Company brews an interesting Black Walnut Stout. Either nut could be used in brewing, but the resulting beer would be different.

Black walnuts have very slightly higher protein content and lower fat content. Both variety of walnuts can be used interchangeably in recipes, but the Black walnuts do have a more powerful flavor.

English walnuts are native to the Middle East while Black walnuts are Native American species.
