What is the difference between American corned beef and English corned beef?

I just saw a program about how to make a Rubens sandwich (US of course) and they include corned beef. However, being English, this is not like any corned beef I have seen before. What is corned beef (in the US) and how is it made?

Reubens are wonderful! To my knowledge, corned beef is the same the in England, Ireland, and the U.S. It is a piece of beef- usually the brisket, but occasionally the bottom round, - that is cured in brine. In the U.S,. some corned beef is cured with potassium nitrate that gives it a reddish color. I grew up in New York, where most corned beef is red; here in New England, most people prefer grey. The taste is the same.

The picture you included on the top looks like traditional sliced corned beef; the one on the bottom is labeled "canned corned beef", which is a different product than the whole brisket, which is sliced and used for a Reuben sandwich. Canned corned beef is already chopped and pressed, so wouldn't be appropriate for the Reuben.

In the U.K., corned beef was given in tins to the troops, and a lot of people got used to eating it that way. What Americans call "corned beef", the Brits call "salt beef". We both make hash of the canned variety, but it's kind of hard to make a Reuben of it!
