What is the difference between a seared and grilled cheese sandwich?

At a local restaurant that I go to on occasion, I usually order a grilled cheese sandwich. The waitress always ask me if I want it seared or grilled. Out of embarrassment of not knowing the difference, I just always asked for grilled. What is the difference between the two cooking methods if any?

Traditionally when one thinks of searing, it has to do with the cooking of meats. When searing beef the outside is quickly grilled and cooked and is done to keep the inside tender and juicy. When grilling, you cook to a different state, maybe more cooked inside than with searing and would be used for cooking chicken, since chicken must be cooked thoroughly before eating.

When dealing with a sandwich, grilling the sandwhich would make the bread toasty and crunchy all the way through and the cheese will be melted. If you opt for a seared sandwich, the bread will be toasted on the outside, the inside would be softer and the cheese will remain firm and not melted.

I have never had a seared sandwich and never have been offered it cooked as such in a restaurant. Which do you prefer, grilled or seared?

I think that I like the grilled the best. I am not really sure that I've had it with the cheese still firm.

Seared is when you but something on a very hot grill just long enough for the outside to quickly cook and seal in the juices - usually used in the context of meat. Grilling is controlled cooking to given points of perfection. Searing a grilled cheese would suggest browning it quickly on both sides and the cheese remains fairly firm on the inside vs grilling (a slower cooking process) where the cheese will melt and be gooey.
