So yes they are called a 'breed' BUT today its a color breed. For specific care instructions i would find out what breed . For exsample my palomino pony was an 'austrailian stock pony'.
I had a palomino stock pony, a grey arab and a dapple grey Thoroughbred Who all recived the same basic care - grooming, exercise ect. (supplimented feed differed between animals)
I did some research but couldn't find anything on specific care for palominos.
The only thing i used to spend some extra time on was a good groom come summer to bring out the shine.
My lovely palomino :)

M$"The Palomino horse is not a specific breed of horse, but rather a coat color that is typically gold with a white mane and tail."
With that said, there's no breed issues with the horse, as it's not a breed of horse, just the markings and colorings of the horse.
