what is the best way to stream Desktop applications over ustream or justin.tv? (hardware options preferred)

By "Stream" you mean to allow remote viewers to see your screen as uStream and such are not bi-directional. Apps such as WebCam Maxx can do this. If you want to record your screen session then play it back you can use Camstudio.
