What is the best way to make homemade french fries?
I don't enjoy those bagged fries that come from the frozen section of the grocery store at all. There is a restaurant in town that makes the best homemade french fries you have ever tasted. I know they are only using potatoes and not mixing and modify them, but they are cooking them using some method I can't figure out.

OK after you cut the fries. Sock them in cold water for one hour. This will remove the starch. poor water out. Don't use a strainer. pat the fries dry. Set your deep firer to 375 then cook small batches for to minuets . This will cook them part way ones all your fries are bleached. Raise the temp to 400 then cook the fries again. wen you cook them twice is will cook both inside and out. I got this recipe from good eats.
