I have provided links for the forums, so take some time to look through those discussions. :)
Here is an easier method.
1. Extract DVD via MacTheRipper to the HD.
2. Launch MPEG Streamclip for individual streams. Fix Timecode breaks. Use presets settings.
3. Recompress to DVD via Compressor
4. Launch DVDSP 2.0 and recompose menu. Correct LBX aspect ratio here via each video stream.
Also there is a software called Nattress Standards Converter which is mentioned in some discussions, though it is not free.
If the above methods does not come handy to you, then I recommend you using Toast 10 which is very easy to use with the drag and drop feature.
I am not familiar with Toast / Mac, but according to the main site, it says

what are these presets settings you mention?
I'll give a definite nod to using MPEG Streamclip - the results it generates sometimes even surpass the $500 software we use at work to convert NTSC to PAL and back.
