I second TweetDeck. It's a very powerful Twitter client that is available on PC, Mac and Linux because it's written in Adobe AIR. It has the ability to organize the people you follow into groups to keep track of who-is-who and to turn off the "all friends" option. It's pretty slick.
The other big one for Mac is Twitterific. It's Freemium software (TD is free) and will insert ads into the twitter stream you're viewing (it won't post them to your account) unless you pay for the "pro" version. (Or whatever it's called.)

It's a free Adobe AIR based application (so it's actually cross-platform: Mac OS X, Windows, and Linux) that offers a lot of great features. Here's a summary from the TweetDeck Web site:
"TweetDeck enables users to split their main feed (All Tweets) into topic or group specific columns allowing a broader overview of tweets. The default columns can contain All Tweets from your timeline, @replies directed to you and direct messages. The GROUP, SEARCH and REPLIES buttons then allow the user to make up additional columns populated from the live tweet information.
