What is the best open source software for recording screencasts on a Mac?
You can leave an optional "tip" with Mahalo's virtual currency, Mahalo Dollars. If you are asking a difficult question that might require some research, or if you'd like a wide variety of feedback, a higher tip often leads to more answers to your question.

Great question... I had a similar question during the summer when I wanted to do some screencasting for one of my websites and potentially for work. I found a program called Jing published by TechSmith. It's not open source, but it's free... I'm assuming that's what you were after. It's pretty good, but somewhat simple and I quickly outgrew it.
If you're willing to spend a little money, check out Camtasia (also made by TechSmith) or ScreenFlow. Both have good demo videos on their websites that explain features, and both have free trial versions... also both cost $99. It sounds like a lot of money, but worth it if you're interested in doing high-quality screencasts. I ended up buying ScreenFlow because I liked the user interface a little better and thought it gave me a little better control over the editing process when compared to Camtasia. They're both very good though.
Hope that helps!
