What is the best method for cooking peas?

I bought fresh peas and was wondering what the best way would be to cook them? Are thre any good salads made with fresh snow peas?

My favorite method of cooking peas, whether they are fresh or frozen is in the microwave. As a matter of fact this is my favorite method for cooking all vegetables, except roast potatoes of course!

The benefits are several, the peas are cooked quickly and retain both color and food value, including the vitamin C content which is easily lost if they are boiled for too long in a lot of water, it is also very easy, almost the same as steaming.

When you have shelled the peas, place them in a microwavable dish, add a sprig of fresh mint, if liked, then add a little water. It is important not to use too much, it should only come about halfway up the level of the peas, so that they cook in the steam. Place the lid on, or cover with cling film (pierce this if used) and cook on full. The time will vary according to the quantity, so after about 5 minutes, check to see if they are cooked, you can always give them a little longer, but if you over cook anything it is ruined.
