M$Basically it is going to depend on:
1. Heat source, how hot is medium. How well does the burner maintain that temperature, i.e. how quickly does it recover once you place the steak and the temperature drops.
2. The steak itself. How thick it is, what it's fat content is, how cold is it when you fry it.
For a steak about 1-1.5 Inches thick you will sautee it approximately 5 minutes per side.
But I think a better way of determining doneness is to use an instant read thermometer inserted into the center of the steak and pulling the steak off the heat once it reaches about 120-125 degrees, then remove the steak from the heat and let it rest, it will continue to cook for a coupe of minutes bringing the steak to about 130 degrees which will be a nice medium rare. Letting the steak rest will help pull in the juices and you will get a nice juicy steak.
