What is the best dinner buffet in Las Vegas? Preferably on the strip.

It's not on the Strip, but I'd recommend the Texas Station. It's a place where locals hang out, still very posh but more affordable. We went there several times when we were in LV visiting my brother-in-law last fall. The buffet has a huge range of choices of foods from different countries, salad and dessert bars, the works.
