Futurama is insanely clever, fast-paced, and hilarious, and its outlandish setting really took advantage of animation. Voice work and guest star were awesome too - Stephen Hawking, Al Gore, and Nichelle Nichols once were all on the same episode.
Other greats:
Daria was smart, socially conscious, and a good cynical look at high school. South Park and The Simpsons are both really good.
And Justice League Unlimited was an amazing action drama that just happened to be animated.
