What is jerk and when do I use it?

Hello mmng23,
The term jerk is used to refer to the food prepared by using jerk spice or seasoning. This seasoning and food originated in Jamaica and is most popular in the roadside shacks that abound in this country and provide fast food. This seasoning is extremely spicy however; the pungency of the seasoning can be lessened by reducing the use of chili pepper. If you want to know more information about the important ingredients in this seasoning such as the Scotch Bonnet chili pepper, allspice berry and thyme check this link http://homecooking.about.com/od/ethnicrecipesandfoods/a/jerkingreds.htm which also has links to jerk seasoning recipes. Also check this link http://homecooking.about.com/od/cookingfaqs/f/faqjerk.htm which has more information about jerk food and seasoning
Jerk seasoning can be applied as a dry rub, but they can also be used in a wet marinade. This seasoning has become quite popular and several manufactures provide them in jars.
