What is Ghee?
Is it a form of clarified butter popular in India and used for deep frying? Because it is cooked longer and all the water is removed, can it then be stored longer in the refrigerator and even at room temperature?

Yes, ghee can be used for deep frying as its smoking point of around 250 degrees centigrade is higher than most other vegetable oils. Also as temperatures during cooking does not exceed 200 degrees centigrade it is good for deep frying. Ghee is mostly used in the [[India[[, but it is also used in Bangladesh and Pakistan and is often made in homes by heating butter and then separating the ghee from the milk solids at the bottom and the scum on the top.
