"_Beef Steak, a la Francaise_

Cut one pound of trimmed fillet of beef across the grain of the meat into three pieces; flatten these with the cutlet-bat, and trim them of a round or oval form; then cut and trim three pieces of suet, half the size of the former: dip the steaks in a little clarified butter, season with pepper and salt, and place them on the gridiron over a clear fire to broil; when done glaze them on both sides; dish them up on two ounces of cold Maitre d'Hotel butter, garnish round with fried potatoes, and serve. These potatoes must be cut or turned in the form of olives, and fried in a little clarified butter."

In his book, The Great Bridge, David McCullough, describes how Washington Roebling built the Brooklyn Bridge with a promenade so that people could do this of an afternoon especially on Sunday. This was a popular activity throughout the 1880's in many areas of the United States. In the Midwest this was done at the town square which was laid out according to law in the middle of the town, usually with the courthouse in the middle. This was shown in The Music Man.

WOW.

Count up the fat in that "_Beef Steak, a la Francaise_" recipe. If I read the recipe correctly, that is 7 ounces of fat and one pound of beef.

This doesn't really answer the entire question.
This is food only, but these recipes are just too interesting not to mention.

Pay especial attention to the Texas Beef Stake, and the Jack Rabbit Stew.
