As a diabetic our family has struggled with finding holiday surprises for me... I miss my cakes and pies. The thing with replacing cakes or pies is you really can't do much with flour products and keep the carbs down... and carbs convert to sugar in your blood. So if you want to keep it safe be careful with the carbs, especially the refined ones.

The one solution I've found that has really been a hit and tastes so decadent that it makes me very happy is a sugar-free Pumpkin Mousse. It's low in carbs and tastes wonderful. It features sugar free-fat free vanilla puding, a can of pumpkin, Sugar-free or Lite Cool Whip (all cool whip is pretty low in carbs and sugar -- take your choice), and pumpkin pie spice. I know that I can eat this stuff like it's going out of style and it doesn't spike my blood sugar, though everyone is different on what effects you. It basically tastes like pumpkin pie with whipped cream... but without the crust :( So check this one out. I LOVE IT!

Pumpkin Mousse

1 29oz can 100% pure pumpkin
1 large box sugar-free, fat free Jell-o pudding mix, vanilla
1 8oz container Lite Cool Whip
1 tsp. pumpkin pie spice

Stir together pudding mix, pumpkin, and pumpkin spice. Fold in Cool Whip. Refrigerate for 1 to 2 hours before serving.

No cholesterol.
High in vitamin A
Source of vitamin C and iron
(Substitute fat free Cool Whip for lite to get Weight Watchers? 1 cup = 1 point.)

I know my wife makes a great Splenda apple pie. She also makes peanut butter cookies without flour and with Splenda for our diabetic nephew. He loves them. She saw the peanut butter cookie recipe on the Food Channel.

the peanut butter cookies look good... splenda and no flour is great for us diabetics... yum!

Being a diabetic, I love to make Dirt Cake. You can follow the regular recipe for Dirt Cake and substitute sugar free Oreo-type cookies for the Oreos, sugar free pudding for the vanilla pudding, Equal or Splenda for the powdered sugar, and sugar free whipped topping for the Cool Whip. It's easy to make and tastes awesome!! (Some people substitute the vanilla pudding for chocolate pudding.) I'm not sure that it is 100% sugar-free as the milk may have some sugar in it as well as the cream cheese.

You could bake a birthday cake with a sugar substitute such as splenda, or I have heard of people replacing part of the liquids in a cake recipe with diet soda.

There are many sugar free/ diabetic recipes. Unless you are looking for a non-traditional dessert to replace the cake all together. The source goes to a huge listing of them.
