Generally the way to go with a literature class is to have the class read either a book or short story and then do review on it later. I would suggest your reviews consisting of the basics like characters, plot, protagonist, antagonist, and tone. Then you would also go over the more in depth stuff such as: symbolism, metaphors, ideology, and hidden meanings.
Also it's good to give them an assignment that makes them write something of their own. How they felt about the book, how they feel about the characters, what they liked or disliked about the story, or even having them write their own story in the mood and tone of the one you had them read. You could also do small quizzes or games of some kind to help them review the things they have learned and read.
