You can always try baked artichokes! Delicious and easy to prepare, they make a great baked vegetable :)
Here's a very simple recipe that has some very good reviews!

Here is another suggestion to cook artichokes , which my sister did once and it was a very simple process and it came out well also..

She rinsed the artichoke, leaving a little water clinging to the leaves. Then completely wrapped the artichoke in saran wrap and microwave for 4-5 minutes until tender.
