What happens if I have a Sharper Image coupon that's worth more than the actual price of the item?

To be able to answer you properly, you would need to describe what the Sharper Image coupon is actually for, if it is for money off a particular product, percentage off, or something else. Without seeing the coupon, or at least knowing what the terms of the offer are and also what item you want to buy with it, it is not possible to give you an accurate answer.
I'm guessing, that you have a coupon for a substantial amount off and that you want to use it for something costing less than the offer. If this is what you mean, it won't work. Apart from the "buy on get one free" deals which are sometimes available, you never get anything for free, except maybe samples of some goods.
