When I was an infant, still on baby food, I (apparently) loooved beets, according to my mum.
As an adolescent and teenager, I thought them rather disgusting, the pickled bright purple blots on an otherwise delicious greek salad.
Now that I'm an adult, I've come back around to beets. Especially when they are fresh from the garden, and served with the beet greens. I love them roasted, steamed, or boiled, with just a little bit of salt and pepper.
I'm still iffy on pickled beets, but at least now I don't pick them out of my salad.
