What flavor do bell peppers add to a dish?

Bell peppers do not add much flavor to a dish in terms of spiciness as they do not contain Capsaicin which is present in chilies and chili pepper. Bell pepper is the only one among the Capsicum family that does not contain Capsaicin and therefore is rated zero on the Scoville scale which measures spicy heat of chilies and chili pepper. There are many different colored bell peppers and while this does depend on the cultivar, they are green when unripe and red when fully ripe.
