What exactly is beef carpaccio or is it just raw beef?
Is there any preparation required in making beef carpaccio or other raw beef dishes such as steak tartare? If I were to buy some raw beef at the supermarket what do I need to do to make beef carpaccio? It just sounds unhealthy to me.

Hi @jasonf!
This is my first time to have heard raw beef as an appetizer, it sounds unhealthy to me either. But according to Arrigo Cipriani, the present-day owner of Harry’s bar, this kind of food was invented at Harry’s Bar in Venice where it was first served to Countess Nani Mocenigo in 1950 when she informed that her doctor only allowed her to eat raw meat. This recipe was named Carpaccio by Giuseppe Cipriani the former Harry’s bar owner in reference to the Venetian painter Vittore Carpaccio. This recipe consists of raw beef with a mustard sauce.
Btw, here’s how to make the Classic Beef Carpaccio recipe:
-quote-
• 4 tablespoons extra-virgin olive oil
• 1 pound beef tenderloin, trimmed of fat and sinew
• 2 cups arugula leaves, torn
• 1 ounce freshly grated Parmesan cheese
• Juice two lemons
• 2 tablespoons capers
• Sea salt and freshly ground pepper to taste
1. Slice beef tenderloin very thinly with a very sharp knife, pound and arrange on plate or platter.
2. Season with salt and fresh pepper
3. Drizzle olive oil and lemon juice on top of the beef, scatter with capers.
4. Place arugula leaves on top dressed with olive oil and lemon
5. Finish with gratings of Parmesan cheese.
6. Serve with crusty bread if desired.
