It is a culinary term involving actual lard. There are several meanings to the word Larding on www.dictionary.net but the most helpful included:
“To smear with lard or fat. Webster or “To stuff with bacon; to dress or enrich with lard; esp., to insert lardons of bacon or pork in the surface of, before roasting; as, to lard poultry. Webster.” There is such a thing as a larding needle that is used to insert fat into the center of lean meat. You can find recipes using this and similar techniques at www.recipetips.com
