What do you take the time to cook from scratch?

I use mixes for most things. I even buy canned gravy. I like to make home fried potatoes from scratch, though, even though grilling the onions to perfection takes hours. Do you have any favorites that you enjoy making from scratch?

(The US expression, "cooking from scratch", means that you only use raw ingredients. Nothing is premixed, pre-cut or pre-cooked.)

My wife and I cook everything from scratch, including all our breads, sauces etc. This is healthier, tastier and definitely cheaper. I doubt if the time we take is very much more than those who use processed foods. And even if it does take a little longer, then we choose to spend the time doing that rather than other things. Let me talk about bread as an example of how people get confused about the time things take.

We make bread three times a week using a stunningly simple no-knead recipe that produces a tasty crunchy loaf. Yes, it takes 15 hours to make -- but the actual work involved is about 20 minutes or less. First, we mix up the flour, yeast, salt and water for the dough. This takes about 5 minutes, tops. We then cover and let sit for 12 hours (and believe me we don't sit around watching this!) When the dough is ready, we turn it out onto a floured board (about one minute) and let it sit for another 15 minutes. We then sprinkle it with cornmeal, wrap it very loosely in a tea towel (about 2 minutes work) and let it sit for another 2 hours. During the final 30 minutes, we preheat the oven to 450, preheating the baking dish at the same time (we use a tajine). At the end of the resting/preheating period, we put the bread into a dish, cover it and bake for 30 minutes. Take of fthe lid and brown for another 15 minutes. Turn out the loaf and let it rest. Perfect bread with about 15-20 minutes real work.

I make biscuits, tortillas, and pies from scratch. I've been thinking about trying to make bread from scratch but I haven't attempted it yet. I also would like to try to make ravioli from scratch. All my gravies are from scratch actually I pretty much make everything except for pastas and breads.

I don't enjoy cooking or baking but I like to eat (unfortunately). There are a few dishes that I will always make from scratch, to name a few: Shepherds Pie, Lasagna, Stew, French Fries, Soups.
I find that when these homemade meals taste much better than store bought.

Pancakes and muffins are two others that I prefer from scratch.

Now that I'm really thinking about it, I don't make anything from scratch - ever. I also never considered that "from scratch" means you can't buy anything pre-cut. Pre-chopped lettuce and other semi-prepared items can save lots of time and effort. I find that the extra expense of buying food that's partially (or completely!) prepared is an extremely small percentage of gross income, so why not have the work done for you?

I make a variety of things from scratch, especially soups and desserts. Some of my soup recipes are just old favorites; the baking is done usually to relax. When I follow recipes, I suppose that is making stuff from scratch too. I will admit to using some canned sauces. I know that I shouldn't but I take the easy road with that.

I cook from scratch on weekends. Of course with Asian food, most of it you will cook from scratch. It's fast and easy, especially stir fries and soups. For cakes or cookies, if I bake, I always try to make it from scratch just to know the process from start to finish. I do sometimes bake cakes from cake mixture such as Betty Crockers (my local cake mix is pathetic), but it's just more to find out what it tastes like. Making cakes and desserts from scratch also allow me to experiment with the taste and process.

Mostly on weekends I cook from scratch and sometimes during the week if it's short. It nothing to put tomatoes through a press that seperates and make raviolis from scratch. I also like to make soups from scratch and dishes in the slow cooker from scratch. My wife bakes from scratch as I don't bake at all except bread. Vegi salads are always from scratch and some other dishes with rice although the meat is purchased. But I even always but veal breast to make scalopini so I can get a little thicker than the store always slices it. It's really not that much more to do from scratch and the flavor is always better.

Well, I never go so far into making something from "scratch" where I am making my own pasta or anything. But a nice hearty home cooked meal is always the best.

One thing that I truly enjoy is homemade macaroni and cheese. The boxed stuff is no comparison. I may not make the noodles, but adding 5 different kinds of cheese and a nice creamy white sauce.....it's the best
