what do water filters filter?
Everyone knows the filer our harmful elements, like lead etc, but do they also filer the good minerals as well, what about fluride?

Different systems filter different impurities. According to http://www.brita.com/us/support/about-impurities/ Brita pitchers filter out particulates, chlorine, and heavy metals:
