Here is a great, simple recipe for awesome beer battered onion rings at home:
2 cups flour
1 beaten egg
salt and pepper to taste
1 cup of beer
1 tsp garlic powder
3 large onions, sliced into rings
oil for frying
After you slice your onions, the best thing to do is to put a large saucepan on the stove over med-high heat and get it hot. While you are mixing your batter, add the oil and let it get hot, but do not overheat. Do not allow your oil to smoke.
Mix your flour and egg together with the salt and pepper, then add your cold beer. Cold beer is important because it will make your rings crispier. Slowly add the beer into the flour mixture and then add a handful of rings to the batter. Make sure your rings are thoroughly coated, then add them to the hot oil. It is important not to add too many rings at one time because the more you add to the oil, your oil will cool off and will not fry your rings properly. These are always better cooked in batches.
One your first batch is done, lay them out on paper towels to absorb any extra oil and continue cooking until all rings are done.
