M$Personally, I like the squash; it's my favorite. All you need to do is dice it, maybe add some apples, and add pumpkin pie seasoning, and it's great.

Those are lovely dishes, by the way, but if you're not a gourmet cook may I suggest a Dinner Loaf by Worthington Foods?
It's yummy, juicy, tasty and ready to eat in less than an hour (not including defrost time). Served next to your regular meat dishes your vegetarian guest will have a nice protein source that will go with everything else you've prepared for your other guests. Assuming you have a gravy that isn't meat based too.
